Ambite

Ambite, located in the valley of the Tajuña River, combines a rich historical heritage with a privileged natural environment. The Church of Our Lady of the Assumption (16th century), the Palace of the Marquises of Legarda, and its unique holm oaks stand out, as well as the historic bridges of the Eleven and Five Eyes. In Ambite, the patron festivals in honor of the Virgin of the Rosary (October) stand out, along with traditional celebrations such as Saint Blaise (February), Saint Isidore the Laborer (May), Holy Week, and the summer festivals in August, which keep the tradition and neighborly coexistence alive throughout the year.

The gastronomy of Ambite is based on traditional Castilian cuisine, with spoon dishes, meats, and products from the Tajuña garden. Homemade stews, lamb and kid, legumes, olive oil, as well as traditional pastry, stand out, reflecting a simple cuisine connected to the territory.
